PAD THAI is a dish of stir-fried rice noodle. It is usually served at casual local eateries in Thailand. It is one of the most famous Thailand’s national dishes. It is made with soaked dried rice noodles, which are stir-fried with eggs and chopped firm tofu and is flavored with tamarind pulp, dried shrimp, shallots, red chili pepper and palm sugar. It is usually served with lime wedges and chopped roasted peanuts.
Let me explain more about its roots. Stir-frying was influenced by Chinese cultures during the Ayudhya Era. Fast forwarded to Rattanakosin Era, in order to promote Thainess to the World, a government leaded by the PM Plaek Phibunsongkhram suggested that we set up a truely Thai dish. Therefore, the cabinet picked the most favorite dish of that era which is PAD SI IEW and adapted it by changing all ingredients e.g. we changed it from rounded noodles to be flat noodles made in Thailand, from pork to be shrimps and we named it “PAD THAI.”
